Oatmeal Craisin Breakfast Cookies

Ok... these are just an excuse to eat cookies for breakfast. It's more like if you make these today, they'll be gone by breakfast tomorrow morning!

Prep Time: 10 Minutes  |  Cook Time: 12 Minutes  |  Makes: 36 Cookies

3/4 cup margarine softened
1/2 cup brown sugar
1/4 cup white sugar
2 eggs
1 teaspoon almond extract
3/4 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
3 cups oats
3/4 cup craisins
1/2 coconut shredded, sweetened

- Cream together margarine, sugar, eggs and extract.
- Mix in dry ingredients.
- Fold in oats, craisins and coconut.
- Spoon onto baking sheet (12 / sheet).
- Bake @ 350° for 12 minutes.

  7. Oooo, the addition of coconut makes these even more irresistible! I don't use margarine, but I bet they'd work with butter too. Yum!
