An old prairie friend and neighbor sent me this recipe. She serves this dressing over organic spring mix greens, topped with hot, caramelized pecans (quickly toasted in a frying pan with a dash of sesame oil and a bit of white sugar), oodles of feta cheese and bits of fresh mandarin oranges on top. 3 tablespoons olive oil
2 tablespoons balsamic vinegar
1 tablespoon red wine vinegar
3 tablespoons pure maple syrup
1 tablespoon lime juice
1 tablespoon fresh thyme, chopped
1 teaspoon parsley flakes
1/2 teaspoon salt
1/2 teaspoon black pepper
- Whisk together and let sit for at least 1 hour prior to serving.
I actually ended up dressing a Roasted Beet Salad I made last night - baby arugula, spinach, spring mix, roasted beets, chevre, walnuts and the Maple Balsamic Vinaigrette. YUM!

This sounds lovely - beets are wonderful this time of year and I really like the ingredients in the yummy dressing.
ReplyDeleteSounds great-will definitely make eating salad more bearable (sp?) Anywho, I think I will swap out the feta for goat cheese to balance the sharpness of the vinegars! Can't wait to try it :)

I make a very similar dressing and often put it on top of a salad very much like the one you mentioned your friend makes. I just love the sweetness of the maple and the balsamic together. Next time I'm adding beets! This looks too good to pass up!
