This recipe makes wonderful loaves and even better muffins! The cinnamon and nutmeg really enhance the flavor, the pineapple helps keep it all moist and the top of the loaf gets a little crispy. Soooo good!
1 cup white sugar
1 cup brown sugar
1/2 cup margarine, softened
1 cup vegetable oil
3 eggs, beaten
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla
1 cup crushed pineapple, drained
3 cups flour
3 teaspoons baking powder
3 teaspoons cinnamon
1 teaspoon nutmeg
3 cups grated carrots
1 cup raisins
1/4 cup walnuts (optional)
- Mix together ingredients in order given.
- Divide batter evenly to fill 2 loaf pans.
- Bake @ 350° for 75-80 minutes.
Note: To make muffins, adjust cooking time down.

Love the pineapple! I bet it adds a nice sweetness in addition to keeping the cake moist. I love a loaf like this--it works as breakfast, mid-day snack, and dessert!

ReplyDeleteIt was a great recipe, but mine turned out a little too crumbly for a loaf; maybe muffins will be better! As a personal preference, I'd put a little more cinnamon & nutmeg than called for in the recipe. Thanks for sharing!
