Lemon Strawberry Imperial Cake Cookies

One of my favorite baking flavors is lemon which I've paired with strawberry jam to make my version of imperial cookies. They also use a cake mix which makes it oh so simple!

1 Betty Crocker SuperMoist Lemon Cake Mix
1/4 cup margarine, softened
1/4 cup vegetable oil
2 eggs, beaten
1 cup strawberry jam

Glaze Drizzle:
3/4 cup icing sugar
1 tablespoon milk

- In mixing bowl, combine cake mix, margarine, oil and eggs.
- Drop 1 inch balls onto cookie sheet (should make 24).
- Bake @ 350° for 8-10 minutes. Allow to cool on baking sheet.
- Place a spoonful of strawberry jam on downside of cookie and sandwich together with second cookie.
- Mix icing sugar and milk together, warm slightly in microwave, and drizzle over each cookie.
- Makes 12 sandwich cookies.
