Chocolate Mint Cake Cookies

These cookies remind me of Girl Scout Cookies... they are so good, and actually addictive. They are the most requested cookie from my family!

Prep Time: 10 Minutes | Cook Time: 10 Minutes | Makes: 24 Cookies

Ingredients:
1 Betty Crocker SuperMoist French Vanilla Cake Mix
1/4 cup margarine, softened
1/4 cup vegetable oil 2 eggs, beaten
1/2 teaspoon mint extract
10 drops green food colouring
1/2 cup chocolate chips

Chocolate Drizzle
1/2 cup chocolate chips
1 tablespoon margarine
1/2 teaspoon mint extract
1 tablespoon milk

Instructions:
- In mixing bowl, combine cake mix, margarine, oil and eggs, then remaining ingredients.
- Drop 1 inch balls onto cookie sheet.
- Bake @ 350° for 8-10 minutes. Allow to cool on baking sheet.
- Melt chocolate chips, margarine and milk together in microwave for approximately 1-2 minutes, stirring frequently. Stir in mint extract. Drizzle over cookies.
- Makes 24 cookies.

  1. I seriously need to try this one out once. It kind of combines two of my fave things in food; mint chocolate flavour and cookies.

    You haven't blogged in a while. Hope all is well. I was reading some of your old posts and came across pictures of your kitchen. Just beautiful. Who makes your cabinets as I would love to have them in my kitchen. Happy 4th.

  4. Made these cookies yesterday...and they were easy and delicious. I added 1/4 cup mint chips and 1/4 cup semi-sweet chips...and skipped the chocolate drizzle. They were just awesome. No taste of the cake mix. I did have to bake it longer than 12 mins. Will be my go to recipe for bake sale and class party.

  5. Allison, I want you to know that I just found you blog today looking thru pinterest under camping for the wasp trap. I decided to take a look around and love it! I feel like I'm reminiscing with a friend by the way you have things set up. It is so inviting! Very nice! I will be trying these cookies out this weekend. I also liked the pantry redo. I don't have one unfortunately,but I have been pining. Plan to reorganize cabinets with roll out shelves this spring. And I too use the modular mates for baking supplies for YEARS -- the best; can stack, hold a lot, durable --love containers like this. Keep up the great job you're doing!
